Sauvignon Blanc

 

Bardessono Sauvignon Blanc is farmed on Masa Ranch in the Yountville Appellation. Michael Masa and Patrick Ridder farm this property organically. This wine is a blend of 85% Sauvignon Blanc and 15% Sauvignon Musqué. Masa produces Petite Verdot, Petite Sirah, Syrah, and produce for sale. 

 

Maxine's Vineyard
 

Maxine's Vineyard Cabernet Sauvignon is grown on the property purchased by my grandfather in 1926. While farming the small vineyard in Yountville for my mother, Maxine Bardessono, no pesticides are used in the vineyard. Sulfur dust is used for mildew control and organic fertilizer is tilled into the rows and a cover crops are planted annually.  Primary and secondary native yeast fermentation embraces the vineyard practices of organic farming.

This Cabernet is a mixture of two appellations, Atlas Peak and a small vineyard in Napa on Partrick Road. This Cabernet is concentrated, rich, and bold but very approachable. It is a different style than the Maxine's Vineyard and delicious!

WINEMAKING
 

Bardessono farms both Cabernet Sauvignon vineyards organically and the Sauvignon Blanc is organically farmed by the Masa Family in Yountville.

 

Comercial yeast or bacteria are not added when fermenting the Cabernet Sauvignon grapes. We rely purely on native and wild yeast fermentation. While in barrel, lees are stirred and barrels are topped weeklly  to induce malolactic fermentation.

 

The Sauvignon Blanc is fermented with two types of commercial yeast that bring out the passion fruit, lime, grapefruit and tropical flavors of the wine. Sauvignon Musqué comprises about fifteen percent of this blend which enhances the aromatics and adds some viscosity and mouth feel.
